Currently you need to change the sdkconfig. See https://docs.toit.io/tutorials/misc/custom-envelope.
I have it on my Todo list to allow this dynamically.

Hi floitsch, I wonder what ithe current status is on this? Can the hostname be changed dynamically, for example by setting "system.hostname" to a new value (and restarting the wifi?).
