I am currently using a 3.5-inch SPI-based TFT touch display. Is it possible to create UI elements such as drop-down menus and left or vertical scrolling? Are there any examples available for these behaviors? Also, does it support animations similar to LVGL when using the Arduino IDE?

The available packages are a bit lower level and anly support drawing a single screen: https://docs.toit.io/language/sdk/display
It's not too hard to build a drop-down menu (or similar UI elements) on top of them, but they aren't readily available.
Afaik we don't support scrolling or animations like LVGL.
